Zure van Tildonk van Hof Ten Dormaal from … indeed, Tildonk!
A brand new special edition this time, one with plums.
In the brewing process, use was made of wild yeasts that are found on their own (brewing) farm.
Each batch of Zure van Tildonk is carefully matured for 1 year in the cellars of the Ursuline monastery Engelenburcht in Tildonk.
This Plum edition has drawn on plums for 6 months after the barrel ripening.
It has a cloudy, reddish brown color with a minimal head that disappears almost immediately.
A striking “brett” smell and a stone fruit fruity taste with a moderate acidity.
The whole is nicely balanced and has a drier finish.
