The Cam is a geuzestekerij, located in buildings of the municipality of Gooik, in the heart of the Pajottenland.
The wort used comes from Boon, Girardin and Lindemans.
After the spontaneous fermentation, the lambic will mature further on oak casks.
The lambic of different ages is then assembled, after which the beer is fermented in the bottle for at least another year.
The slow, traditional, production method produces a 100 hectoliters of Oude Geuze annually.
Each bottle requires craftsmanship for 3 years.
