Zure van Tildonk from Hof Ten Dormaal from … indeed, Tildonk!
A special edition this time, one with Stekelbezen or gooseberries!
In the brewing process, they used wild yeasts found on their own (brewing) farm.
Each batch of Zure van Tildonk is carefully matured for 1 year in the cellars of the Ursuline monastery Engelenburcht in Tildonk.
This Stekelbees edition has aged another 6 months on gooseberries.
It has a light amber color with a minimal head that disappears almost immediately.
A striking “brett” scent with a soft, refreshing, slightly sour touch.
It looks a bit like a gueuze.
